Frequently Asked Questions
Everything you need to know about this tool, how it works, and privacy.
What is baker's percentage?
Baker's percentage expresses every ingredient weight as a percentage of the flour weight, which is always set to 100%. For example, if a recipe uses 500g flour and 350g water, the water is 70% (350 ÷ 500 × 100). This method makes it easy to scale recipes up or down and compare dough formulas.
How do I use this calculator?
Choose Weights → Percentages to enter flour weight and ingredient weights, then see each ingredient's baker's percentage. Choose Percentages → Weights to enter flour weight and baker's percentages, then see the calculated ingredient weights. The calculator also shows total dough weight and hydration (water percentage).
What is hydration in baker's percentage?
Hydration is the water weight divided by flour weight, expressed as a percentage. It determines dough consistency: 50-57% is stiff (bagels), 58-65% is standard (bread), 65-80% is high hydration (ciabatta, focaccia), and above 80% is very high hydration.
Can I use different units for flour and ingredients?
The calculator uses the flour unit for all weights. Select the flour unit (grams, kilograms, ounces, or pounds), and all ingredient weights and results use the same unit. Keep units consistent across a recipe.
